Sep 02, 2025
Created for us by our friends at Lengua Madre NOLA, the Lengua Milk Punch is the ultimate chicory pecan bitters cocktail for your next holiday party. This recipe transforms a classic into a smooth, elegant, and crystal-clear libation that's both beautiful and delicious. It proves that using high-quality bitters, like our signature El Guapo™ Chicory Pecan Bitters, is the key to crafting a memorable drink that will impress every guest with its unique flavor.
What Makes a Lengua Milk Punch So Special?
The secret to this punch is the ancient technique of clarification, which gives it a remarkably silky texture and a clean, bright flavor profile. The combination of Charanda Uruapan, a unique Mexican rum, with zesty lemon and apple juices creates a complex base. The star of the show, however, is the El Guapo™ Chicory Pecan Bitters. These bitters infuse the punch with a beautiful nutty, roasted flavor that perfectly complements the rich browned butter and sweet cane sugar, turning it into a rich and savory cocktail.
How to Make a Chicory Pecan Bitters Cocktail
This recipe makes a large batch, perfect for a holiday gathering. While it requires time to clarify, the active prep work is minimal and the results are stunning.
Makes 3.5 liters (~20 six oz servings)
x @opticlark of @lenguamadrenola
- 25 oz Charanda Uruapan blended
- 25 oz Charanda Uruapan single Agricola
- 25 oz lemon juice
- 30 oz apple juice
- 4 oz El Guapo™ Chicory Pecan Bitters
- 4 oz El Guapo™ Holiday Pie Bitters
- 1000 g Louisiana cane sugar
- 2 c Browned butter 🧈
- 2 c Whole milk 🥛
- Skewered hibiscus soaked & dehydrated apple slice, for garnish
Instructions:
- In a large, non-reactive container, combine the brown butter and whole milk and stir until mixed.
- Slowly add the juices, bitters, and sugar to the container. Stirring as you pour will help to promote curdling.
- Cover the container and place it in the refrigerator to rest overnight.
- After the resting period, strain the batch. You will need a fine mesh strainer lined with a 100 micron nut milk bag.
- Pour the cocktail mixture through the filter. Strain it two times to achieve perfect clarity.
- Serve chilled and garnish with a skewered hibiscus soaked and dehydrated apple slice.

Frequently Asked Questions
Q: What is a clarified milk punch?
A: A clarified milk punch is a cocktail where a milk mixture is added to an acidic base. The acid causes the milk to curdle, trapping impurities and solids. The mixture is then strained, resulting in a perfectly clear and shelf-stable cocktail with a silky texture.
Q: What do chicory pecan bitters taste like?
A: Our chicory pecan bitters have a distinct flavor profile that balances the nutty, roasted flavor of pecans with the earthy, warm notes of chicory root. They are reminiscent of a savory coffee and are perfect for infusing drinks with a sophisticated, rich flavor.
Q: Can I make this recipe in a smaller batch?
A: Yes, you can. Simply scale down the ingredients proportionally. For a single serving, the ratio is 1.25 oz of each spirit, 1.25 oz of lemon juice, 1.5 oz of apple juice, 0.2 oz of each bitters, 50g of sugar, and 0.1 cup of both browned butter and whole milk.
