Created by Oliver Sovol, the former Head Bartender at James Beard award-winning chef Alon Shaya's Eat with Saba, the Cornerstoned is an unexpected savory libation. This recipe features a special sweet corn infused mezcal and is brought to life by the distinct flavor of our El Guapo™ Crawfish Boil Bitters. For those who appreciate a dry, complex, and smoky cocktail, this is a drink that truly stands out from the crowd.

Cornerstoned Cocktail Recipe

This is a dry, savory, and smoky drink that balances the earthy mezcal with the unique flavors of Caraway Liqueur and Madeira. It’s an ideal choice for the adventurous cocktail enthusiast. The final touch of our Crawfish Boil Bitters adds a layer of unexpected spice and depth.

Ingredients

  • 1.5 oz sweet corn infused mezcal
  • .75 oz Caraway Liqueur (we used Gilka Kummel)
  • .25 oz Rare Wine Co. Baltimore Rainwater Madeira (or other high-quality Madeira)
  • 4 dashes El Guapo™ Crawfish Boil Bitters
  • Fresh bay leaf, for garnish

Instructions

  1. Combine the infused mezcal, Caraway Liqueur, Madeira, and El Guapo™ Crawfish Boil Bitters in a clean mixing glass filled with ice.
  2. Stir with a bar spoon until the mixture is well chilled.
  3. Strain the cocktail into a Nick & Nora glass.
  4. Garnish with a fresh bay leaf, using a miniature clothespin to affix the garnish if desired.

 

How to Make Sweet Corn Infused Mezcal

The key to this cocktail is the sweet corn infused mezcal. This process is simple but adds a remarkable depth of flavor to the drink.

Ingredients

  • 2 ears fresh sweet corn
  • 1 bottle of mezcal

Instructions

  1. Cut the kernels from two ears of fresh sweet corn.
  2. Pour one bottle of mezcal over the corn kernels in a non-reactive container to steep. Reserve the empty mezcal bottle.
  3. Allow the mixture to infuse at room temperature for up to 24 hours. The longer you steep, the stronger the corn notes will be.
  4. Strain the infused mezcal through a fine-mesh sieve or cheesecloth.
  5. Using a funnel, pour the strained mezcal back into its original bottle.
  6. The infused mezcal will keep for up to two months if properly refrigerated.
