Irish Eyes Are Smiling

Makes 1 cocktail
- 1.5 oz Blanco Tequila
- .5 oz El Guapo® Falernum
- 4-5 oz Lime Topo Chico
- Kiwi Lime Mint Ice (recipe below)
- Lime twist & oxalis, for garnish
Add tequila and Falernum to a mixing glass with a tiny splash of Topo Chico. Stir
to combine. Fill a glass with kiwi ice. Add enough Topo to fill about halfway, then pour
in tequila mixture. Top off with more soda. Stir. Garnish with lime twist and oxalis.
There edible and taste like citrus!
Kiwi Lime Ice
- 4 Kiwi Fruit
- 2 Limes
- 1 oz Agave Nectar
- Several Mint Sprigs
Blend mint, agave, juice of two limes, and kiwi fruit (skin and inner white pith remove)
until smooth. Fine strain using cheesecloth or a nut milk bag to separate out all pulp
and seeds. Pour strained juice into an ice cube tray and freeze for at least 24 hours.
