A modern fusion cocktail that takes the best of a French 75 and the foundation of a mojito, with a touch of champagne, aged rum and mint, and gloriously mixes them together for refreshing drink perfect for balmy summer weather (but hard to resist even during colder months).

Makes one cocktail
â€ĸ 1.5 ounces Privateer True American Amber Rum
â€ĸ 1/4 oz El GuapoÂŽ Lime Cordial
â€ĸ 3-4 dashes El GuapoÂŽ Cuban Bitters
â€ĸ 6 Mint leaves, plus sprig for garnish
â€ĸ 1 oz Champagne
â€ĸ 1 small lime wheel, for garnish

Put the mint into a cocktail shaker. Add the cordial and gently bruise the mint with a muddler or wooden spoon. Add the rum and the bitters and fill the cocktail shaker with ice. Shake vigorously until the cocktail is well-chilled, about 15 to 20 seconds. Strain into a cocktail coupe and top with the champagne. Garnish with a lime wheel and mint sprig. Serve immediately.
