  2. Vigorously dry-shake (without ice) for about 30 seconds to emulsify the egg white and create a frothy texture.
  3. Add 3 or 4 ice cubes and shake again until the mixture is well chilled and the ice has almost melted.
  4. Double-strain into a chilled glass and top with club soda.
